Shrimp Sandwiches

Ingredients:

  • good handful of large peeled cooked shrimp sliced in half sideways
  • brown bread or dark rye bread, no seeds
  • soft cream cheese
  • guacamole - homemade or purchased - your choice
  • bean sprouts (optional)

Directions:

  1. spread cream cheese on one (or both if you like) slices of bread
  2. top with shrimp on one slice
  3. top with guacamole
  4. top with sprouts if you like
  5. Eat. Enjoy!

BBTS (Bacon, Basil, and Tomato Sandwiches) with Wasabi Mayonnaise

Ingredients:

  • Package of six English Muffins
  • 2 vine ripe tomatoes
  • 1 cup fresh basil leaves, washed and dried
  • _ cup mayonnaise
  • 1 T. wasabi powder
  • 1 T. water
  • 12 slices bacon, cooked and drained
  • Olive oil
  • Salt

Directions:

  1. Slice tomatoes, drizzle with olive oil and a pinch of salt, and let stand at room temperature to tenderize.
  2. Heat grill or grill pan on stove. Split English muffins and brush lightly with olive oil. Heat muffins on grill or grill pan until crispy and grill marks appear.
  3. In small bowl, mix 1 T. wasabi powder and 1 T. mayonnaise. Whisk until lumps disappear, then whisk in mayonnaise.
  4. To assemble sandwiches, spread wasabi mayonnaise mixture on both sides of bread. Top with 1 slice of tomato, basil leaves, and 2 slices of bacon, cut to fit the muffin.
  5. Serve with a side of seasonal fresh fruit.
