Potato Breakfast Cups

What a better way to celebrate Saint Patricks Day than with delicious New Crop Potatoes?!? We made these awesome little potato breakfast cups and they are perfect for any morning especially if you’re on the go! These are really easy to make and customize!

Preheat your oven to 350 degrees and start with a Russet Potato! We spiralized  ours a grater will work just fine.


Once your potato is grated add some olive oil to a pan and over medium heat and throw in the potato. Once the potato is cooked through remove it from the pan and pop it in the fridge for a few minutes, enough to cool it down just a little bit. Next crack and whisk and egg and coat the potato well. Add your seasonings here. We added salt and pepper, locally made Weasel Sneeze  season and garlic powder!

Next add the potato to a greased muffin pan. IMG_4415

Bake in the oven for 20 minutes for a crispy potato muffin!

Top with onion and chive cream cheese or cut it in half and add some crispy bacon! YUM!
